I have currently an app available on Testflight which lets you record a Inline Skating training with route tracking.

A colleague of mine was disappointed that the built in workout app on Apple Watch lets you record an Inline Skating training but doesn't record the route. That's all it does.

Requirements:

• Apple Watch with watchOS 8
• iPhone with iOS 15

You don't need the iPhone to see your route, it's also available after the workout in Apple's Fitness app.

About the colors on the phone, well, my colleague is a girl, she likes it and we have to deal with it. ;)
